can somebody refer me to a snap disc switch that I can use on the back of my solar hot water panel that turns on when it reaches a temperature of 100 degrees or more? It's for a 120 volt pump. Thank you.

They're everywhere. Google "snap disk fan control"

This is programmable: https://www.ink-bird.com/products-temperature-controller-itc308.html

However for a water system with storage I think you need a differential controller that compares the collector temperature with the storage temperature, and only turns on the pump if the collector is warmer than storage. https://www.wolfautomation.com/dif-temp-controller-for-solar-heating-44845/?gclid=EAIaIQobChMI3c7B5aOW5wIVhZOzCh2C5QhbEAQYCCABEgJVDPD_BwE
