Where are you planning to install your heat exchanger, and what do you plan to use?

I plan to put the heat exchanger in the manifold at the end of the panel nearest the house. I will use this:

It is 38" x 26" x 6". I hope it is enough. If not, I can supplement it with a similar but smaller unit 16" x 10" x 3" or look for something else.

I think it will be. You can adjust heat harvest vs temperature by adjusting airflow. Water flow doesn't seem to have as much effect.
