My girl and I are both veterans and are in the midts of converting our 1998 international 3800 dt466e school bus. I essentially only get how install solar panels and how to hook them up towards the battery bank and I know how to put batteries in series. I know I want 1000 - 1500 watt system I believe I have enough space for a large battery bank but what do you guys reccomend? My biggest question is once I get the battery bank connected I need a how many breaker boxes of which kind I'm I need 110 and how how do you install shore power?

An automatic transfer switch will automatically disconnect any power from a inverter and  battery bank when it detects shore power. They are a little expensive, a cheaper but not as convenient is to simply wire both shore power and inverter power to individual receptacles and simply move a plug to the source you want. My 1960 GMC4104 coach is wired that way with two 30A receptacles, it has worked well for 25 years.

For a 1000 - 1500 watt system the Power Inverter will handle the function of a breaker box. Power Inverters have overload protection.
For shore power, get a solar charge controller with both DC & AC inputs. When you plug in to shore power, the charge controller will draw power from the AC line and charge your battery bank also.
If your battery bank is inside the bus, use Absorbent Glass Mat (AGM) batteries. Do not use Flooded Lead Acid (FLA), FLAs vent toxic fumes that are detrimental to your health and the health of your equipment.

As far as the transfer is concerned, an inverter-charger will do it for you.  The automatic switch is built in.
